Black Market Food Truck Owners Prepare to Open Restaurant

Buffalo’s resurgence continues with the announcement of Marble + Rye, a new restaurant from Michael Dimmer and Christian Willmott, the imaginative minds behind the renowned Black Market Food Truck. Marble + Rye will be located at 112 Genesee St., just adjacent to the emerging Medical Campus Corridor, and they expect to open for business in Spring 2015.

Dimmer and Willmott, friends and business partners armed with culinary educations from Niagara Culinary Institute, years of hard-earned experience in a variety of restaurant positions, and boundless creative enthusiasm, launched the Black Market Food truck in January 2012. The truck, with its focus on hearty staples like gourmet sandwiches that utilize fresh, unique ingredients and a rotating selection of arancini, has enjoyed a meteoric rise to the top of the nascent food truck scene in WNY.

“We have had such a great experience with the Black Market Food Truck. It’s been amazing and humbling to see people love what we do and we intend to keep BMFT rolling right along. But we’ve decided that the time is right to take the next step,” says Willmott.

Marble + Rye will be a full-service restaurant and bar with seating for approximately 70 guests. The menu will be reflective of the duo’s creative cooking ethos, focusing heavily on New American cuisine with a global influence, including a truly inspired selection of choice cuts of prime meat, specialty burgers, and innovative dishes crafted with deep attention to detail.

Dimmer notes, “Our food philosophy has always been that everything is better when made from scratch and we intend to carry that through to Marble + Rye. We will be sourcing as much as we can locally and using the seasonality of ingredients to guide our menus.”

The restaurant will feature a variety of gourmet dishes, from small plates to wood-fired steaks, with a heavy influence on local, seasonal products prepared with a unique twist. There will also be a comfortably chic bar area offering premium cocktails and an impressive assortment of rye whiskeys along with other spirits, beers, and wines.

In order to meet demand from the Medical Campus, Catholic Health, and other growing areas in downtown Buffalo, Marble + Rye will be open for both lunch and dinner service and will utilize an innovative online ordering system and an efficient outdoor pickup station, as well as offering a selection of beer to go.

The building at 112 Genesee St. is currently being renovated by the exacting professionals of the Lamparelli Group. Ultimately, this historic building will feature a thoroughly modern decor and top-of-the-line equipment like a Mexican plancha and a wood-fired oven. Work is expected to be complete on time for an early-Spring 2015 opening.
