When I think of fall, I think of pumpkin pie spices. Leaves are already falling on our street, and store aisles are filling with Halloween candy and paraphernalia. I even saw Thanksgiving decorations today. We’re craving those warm, soul-satisfying spices that come along with this time of year, so I pulled out my pumpkin bread recipe and got right to it!
I borrowed this delicious recipe from a friend about a year ago and I’ve been making it ever since, with a few minor tweaks. Here’s my version:
1 c all-purpose flour
1 c whole wheat flour
1/2 tsp salt
1/2 tsp baking soda
2 1/2 tsp baking powder
1/4 tsp ground cloves
1/2 tsp ground nutmeg
1 tsp cinnamon
1/3 c vegetable oil
3/4 c brown sugar
1/3 cup orange juice
1 1/2 c pumpkin puree
1. Preheat oven to 350 F.
2. Mix together flour, salt, baking soda, baking powder and spices.
3. In a large bowl, beat together oil, brown sugar, eggs, orange juice and pumpkin.
4. Stir flour mixture into pumpkin mixture until just combined.
5. Pour batter into prepared loaf pan. Bake in preheated oven for 1 hour.
This bread always gets rave reviews before it’s even eaten. The orange brings out the flavors of cinnamon, clove, nutmeg and pumpkin beautifully. There’s something about these spices getting hot and toasty and floating through the air that gets everyone talking. And when the bread is eaten, it delivers. It feels like the holidays.
A word to the ladies: every guy I know loves the smell and taste of this bread. As in, they make a big deal about it beyond the usual “that smells so good” when something yummy is in the oven. Just sayin’…if you’re looking for a special treat for the man in your life, give it a go!
