What’s for Dinner? Fettuccine Alfredo & Naan Pizzas
The other night, we were in the mood for pasta and I was looking for a quick dish I could make with ingredients on hand. I took stock of my pantry and refrigerator and noted that I had all the fixings for Fettuccine Alfredo: fettuccine, garlic, olive oil, aged Parmesan cheese, Romano cheese, cream and butter.
All set, right? Well, not exactly. I wanted some bread or pizza to serve on the side. I had no time to run to the store for a fresh loaf or defrost pizza dough from the freezer. Just then, I saw our favorite garlic naan in the freezer and I remembered what my friend, Jill, told me: naan pizzas!
I had leftover homemade tomato sauce, so I put a hearty ladle on each piece of naan, then cut up mozzarella cheese for each piece and got to work on my topics. I had beautiful red onions from our Porter Farms CSA and a little jar of these amazing balsamic capers. I finished each piece with a sprinkle of aromatic organic dried oregano and grated Romano cheese. Now it was pizza.
Just place these guys on a baking sheet, bake at 350°F for about 10 minutes and they come out lovely. Turn the oven up to 400°F for half the time if you like the naan extra crispy and want the top toasty. Give it a try!
